WHY DOES HALLOUMI NOT MELT?
The unique characteristic of halloumi is that it does not melt when grilled because of its high melting point. This is due to the fact that it is cooked twice.
ZUCCHINI AND HALLOUMI FRITTERS INGREDIENTS LIST
You’ll need these ingredients to put make these Zucchini and Halloumi Fritters…
- Corn Kernels – Can use fresh, frozen or canned kernels.
- Green Onion / Shallots
- All Purpose Flour – OR you can use wholemeal flour or almond flour if you’d prefer.
- Olive Oil – Or you can use another frying oil, like grapeseed oil, if you prefer.

- Grate the zucchini and carrot directly into a colander and leave rest for 10 minutes. Then squeeze out extra moisture either by wringing the mixture with your hands and placing in a clean bowl OR by putting into a clean tea towel and wringing it.
Mix all the fritter ingredients in a large mixing bowl until well combined.
Heat oil in frying pan on medium heat. Place a tablespoon or so of the fritter mixture in the pan and flatten with the back of the spatula. Repeat with the remaining mixture, cooking in batches without overcrowding the pan (I usually fit 4 fritters each batch). Cook for 3-4 minutes each side until golden and crispy. Transfer to a plate lined with paper towel.
